Add the mushrooms and a few dashes of salt. Cook until the mushrooms are tender and lightly browned, about 4 to 6 minutes, then set them aside. <span style="color: #2b00fe;"><i>Or maybe I can use Pot 2 for this part once the noodles have been strained and set aside.</i></span></li><li><i style="color: #2b00fe;">Back to Pot 1 </i>Once the broth is done cooking, strain out the onions, ginger and spices (this is easiest with a small metal sieve, but you can also strain the mixture through a colander into another large bowl). Season it to taste with extra tamari and/or salt until the flavors of the spices really shine.</li><li>Ladle the broth into bowls, add cooked noodles and mushrooms, and fresh garnishes to your heart’s content (don’t forget the lime!). The only con is that you can't microwave this bento. There are other bento-like boxes that will keep food hot or cold all day if that's what you're looking for.<br />

- 20 wings<br />
- 3/4rd cup of flour<br />
- 1/2 teaspoon cayenne pepper<br />
- 1/2 teaspoon salt<br />
- Franks Wing Sauce OR Franks Hot Sauce (1/2 cup) + butter (1/2 cup melted)<br />

<b>DIRECTIONS</b><br />
- Line baking sheet with aluminum foil, lightly grease with cooking spray.<br />
- Place flour, cayenne pepper, salt into zip lock bag, shake to mix.<br />
- add chicken wings to bag, and toss until well coated in flour mixture.<br />
- place wings onto cooking sheet, and place into fridge.<br />
- refrigerate at least 1 hour.<br />
- preheat oven to 400 degrees.<br />
- dip each wing into sauce and put back on tray.<br />

Recipe found through a facebook Gluten + dairy free group, originally posted on <a href="https://www.ambitiouskitchen.com/2015/05/dairy-free-gluten-free-cinnamon-rolls-with-vanilla-bean-glaze/" target="_blank">Ambitious Kitchen</a>. All of my revisions and comments are noted in italics and purple font color.<br />
<br />
INGREDIENTS<br />
1 cup unsweetened almond milk, warmed to 110 degrees F<br />
1/3 cup granulated sugar*<br />
2 1/4 teaspoons dry active yeast (use the fast rising kind)<br />
2 eggs<br />
1/4 cup melted coconut oil*<br />
4 cups <a href="http://amzn.to/2lFzQUi" target="_blank">Pamela's Gluten Free Bread Mix</a> (about 1 small package)<br />
1 2/3 cups <a href="http://amzn.to/2qcsRY7" target="_blank">Pamela's Gluten Free All-Purpose Flour - Artisan Blend</a>, plus more for dusting<span style="color: purple;"> <i>(oops, I used gluten free corn flower and hey, the recipe still turned out good!)</i></span><br />
1/2 teaspoon salt<br />
3/4 cup dark brown sugar<br />
1/3 cup coconut oil, softened but not melted*<br />
1 1/2 tablespoons ground cinnamon<br />
<br />
For the glaze:<br />
1 cup confectioner's sugar<br />
1-2 tablespoons unsweetened almond milk, depending on how thick you like your glaze<br />
1/2 teaspoon vanilla extract<br />
seeds from one vanilla bean<br />
<span style="color: purple;"><i>(this is the glaze the recipe called for. I'm not a big store bought almond milk fan, so next time I would like to try a glaze with perhaps soy milk or another alternative)</i></span><br />

<br />
INSTRUCTIONS<br />
<br />
<ol>
<li>Add milk, sugar and yeast to the large bowl of an electric mixer. It's important to make sure the milk isn't too hot or it will kill the yeast. On the other hand, if the milk is too cool, the yeast will not activate. Let the yeast with the milk for 5 minutes, do not touch or stir. You will know if the yeast activated properly if by the end of 5 minutes, it has started to bubble or foam a bit.</li>
<li>In a separate medium bowl, whisk together both flours and salt; set aside.</li>
<li>Once the milk is a bit foamy, add in the eggs, coconut oil and half of the flour mixture; stir until just combined. Then add in the rest of the flour, 1/2 cup at a time, and stir again until just combined. Place dough hook on your mixer and run on medium-low speed for about 8 minutes. Alternatively you can knead the dough by hand for about 10 minutes. The dough should be elastic like but not sticky. Grease a large bowl with oil or cooking spray. Add dough and turn over, making sure to coat it all with the oil. Cover with plastic wrap and a towel, then place in a warm place to rise for a little over 1 hour or until doubled in size. If you want bigger rolls, let it rise for up to 2 hours! <i style="color: purple;">(I got away with just keeping this in the oven for 45 minutes)</i><br />Tip: I usually turn my oven to 200 degrees then immediately turn it off to create a little heat. After that I place my bowl of dough in the oven to help it rise. Works every single time!</li>
<li>Grease a 9x13 inch baking pan with nonstick cooking spray or coconut oil. Once the dough is doubled in size, punch it down! Sprinkle a little gluten free flour on your rolling surface, then roll out the dough into a 15x9 inch rectangle. Spread 1/3 cup of coconut oil all over dough (you'll want it to be easily spreadable so it's okay if it's a little melted). Mix the cinnamon and brown sugar together then sprinkle all over dough. Use your hands to rub sugar/cinnamon mixture into the dough a little bit. Beginning at the larger end, tightly roll up the dough and pinch the edges together to seal. Use a serrated knife or unflavored dental floss to cut the dough into roughly 2 inch sections so that you have 12 rolls total; place rolls in pan. </li>
<li>Cover with plastic wrap and place on top of oven to rise again for 30 minutes. <i style="color: purple;">(I skipped this step and went straight to baking and it still turned out good)</i></li>
<li>Once you are ready to bake the rolls, preheat the oven to 350 degrees F. Bake rolls in oven for 20-25 minutes or until a tiny bit golden brown on the edges. Mine were perfect around 23 minutes. Remember you don't want to over bake them or they'll turn rock solid. Once rolls are finished baking, set aside to cool for 5-10 minutes while you make the glaze.</li>
<li>In a small bowl whisk together powdered sugar, almond milk, vanilla and vanilla bean. Add more almond milk if you want a thinner glaze. Drizzle over warm cinnamon rolls and serve immediately! </li>

If you are not dairy free, you can use regular milk and butter in this recipe, if you so choose.<br />
<br />
What can I use besides coconut oil?<br />
If you aren’t dairy free, you can use butter. If you still want to make these dairy free, you can use a vegan buttery spread.<br />
<br />
Can I sub something for the regular sugar and/or brown sugar?<br />
Yes! You can use maple sugar or coconut sugar, if you prefer a refined sugar free treat. The filling might not necessary taste the same, but I’m sure they will still be delicious!<br />
<br />
Can I make these vegan?<br />
The only thing that is preventing these from being vegan is the egg. Unfortunately I had a reader report that using a flax egg didn’t turn out too well for them.<br />
<br />
Can I make these the night before and bake them in the morning?<br />
Yes! To make these into overnight cinnamon rolls, do not let dough rise the second time, instead place rolls in pan (after the first rising), cover with plastic wrap, then immediately place in the fridge. The dough will rise overnight again. The next morning take rolls out of the fridge and let them sit at room temperature or in a warm spot for 30-45 minutes, then bake as directed. We started hiking with Maya when she was 6 months old.<br />

The minimum weight for a baby in the carrier is 16 lb.<br />

<b>Duration of hike:</b><br />
The longest we've tried to go with her has been 30 minutes as a time. We will take her out of the pack for a break for a few minutes, and then she's ready for another 30 minutes. She also has napped in the pack while hiking.<br />

The version I linked to above is the lowest cost hiking carrier Kelty sells. There are some cool features in the more expensive pack, but I do not feel like with our pack it NEEDS anything more, and didn't want to shell out an extra $50 for small features.<br />

<br />
In a food processor, drop the prunes and dates through the feed hole one by one. Scrape the processor bowl and run until the prunes and dates are smooth.<br />

Add remaining ingredients except for the coconut. Run until smooth and scrape the processor bowl with a spatula as needed.<br />
<br />
Roll the mixture into 12 one-inch balls and roll in coconut to coat. Refrigerate for at least 1/2 hour.<br />

INGREDIENT<br />
3 Tbls butter<br />
2 cups flour (or can substitute partially with whole oats)<br />
2/3 cup sugar<br />
3 tsp baking powder<br />
2 cups milk<br />
4 cups berries (frozen works just fine!)<br />
<b>You'll need a <a href="http://amzn.to/2wMUMAD" target="_blank">9x9 cake pan</a>. </b>I love<a href="http://amzn.to/2wMUMAD" target="_blank"> this one </a>that is non-stick and has a lid to keep it fresh all week in your fridge.<br />

DIRECTIONS<br />
Melt the butter in a cake pan (9 x 9) - I turn on oven and place the butter inside and let it melt.<br />
<br />
Mix next four ingredients together and pour in pan after butter is evenly distributed on the bottom.<br />
<br />
sprinkle berries on top .<br />
<br />
Bake 350 for about 40-45 minutes.<br />

Just as a side note. I created my own mixture of flour. I use a combination (equal part of each) of ground <a href="http://amzn.to/2wCSbZw" target="_blank">oatmeal</a>, <a href="http://amzn.to/2wjrztY" target="_blank">spelt flour</a>, <a href="http://amzn.to/2wDPY01" target="_blank">almond meal</a> and <a href="http://amzn.to/2wDW3tk" target="_blank">rye flour</a>. Preheat oven to 400°. Snap off tough ends of asparagus, and discard. Toss together asparagus, next 6 ingredients, 1 Tbsp. olive oil, and 1/2 tsp. each salt and black pepper. Divide mixture among parchment paper squares; top each with 1 snapper fillet, skin side up. Sprinkle with remaining salt, and drizzle with remaining oil. Squeeze juice from lemon over fillets; and top each with 1 Tbsp. butter. Bring parchment paper sides up over mixture; fold top, and twist ends to seal. Place packets on a baking sheet.<br />

2. Bake at 400° for 15 to 20 minutes or until a thermometer registers 140° to 145° when inserted through paper into fish. Place packets on plates, and cut open. Serve immediately.<br />

PARCHMENT IS BEST FOR: Fish fillets that are about 1 inch thick, such as snapper, flounder, sole, striped bass, and salmon.<br />

EXPERT ADVICE: Packets must be tightly sealed so they don't come undone while baking. 32 caramel squares, unwrapped<br />
½ cup heavy cream<br />
¾ cup butter, melted<br />
¾ cup brown sugar, packed<br />

1 teaspoon baking soda<br />
6 ounces semisweet chocolate chips <span style="color: #134f5c;"><i>I found that to be too much chocolate...</i></span><br />

DIRECTIONS<br />

<ol>
<li>Preheat your oven to 350. <strike>Grease an </strike>8×8 pan or you can line it with aluminum foil or parchment paper for easier removal. The caramel gets very sticky. (This can also be made in a 9×13, by doubling the ingredients)</li>
<li>In a mixing bowl, combine melted butter and brown sugar. Add flour, oats, and baking soda. Mix until combined well. </li>
<li>Divide the cookie mixture in half and pat half of the mix into the bottom of the 8×8 pan. Bake for 10 minutes and remove from oven.</li>
<li>While the crust is baking, combine the caramels and heavy cream in a saucepan over medium heat; stir until completely melted and smooth. The caramels can also be melted in the microwave, just stir after every 30 seconds being careful not to let it burn. <span style="color: #134f5c;"><i>The microwave version worked very well when using my ceramic bowl. Very easy to clean. Also the heavy cream made the caramel stay perfectly gooey for days.</i></span></li>
<li>Remove pan from the oven, immediately sprinkle chocolate chips over the crust. Pour warm melted caramel mixture over the chocolate chips and crumble remaining cookie dough on top.</li>
<li>Return to oven and bake for 15-20 minutes until the edges are lightly brown.</li>
<li>Once removed from the oven, allow them to completely cool and the caramel to set up. The caramel is like molten caramel right out of the oven and you want to let it cool. You can speed up the cooling process by putting it in the fridge if needed.</li>
<li>Gluten Free Version: Use gluten free flour.</li>
<li>Use certified gluten free oatmeal, can be found at Trader Joe's</li>

<li>Preheat your oven to 325F and toast your hazelnuts for about 7-10 minutes. Let them cool completely. You should begin to hear their skins crackle while cooling; this is a good sign! <span style="color: purple;">Skip this step if you don't use hazelnuts.</span></li>
<li>Meanwhile, cook your quinoa. Importantly, rinse it well! Boil the water with a pinch of salt, and add your rinsed quinoa. Turn your stove down to medium-low and let it cook for roughly 15 minutes, or until the water is absorbed. Fluff quinoa with a fork, and let it cool in the fridge. </li>
<li>Going back to the cooled, toasted hazelnuts; remove the skins. Chop the hazelnuts up, leaving them in large pieces. <span style="color: purple;">Skip this step if you don't use hazelnuts.</span></li>
<li>Preheat a skillet with 1 tbsp of oil and soften your finely chopped onion and celery. Season with a pinch of salt and pepper to taste. Try not to brown them, 5 to 7 minutes on medium - low heat should do the trick. Set aside in a large salad bowl. </li>
<li>Rinse your parsley well and chop it finely followed by your dried cranberries and green onions. Add all this to the onion and celery mixture. </li>
<li>Core and dice the apple, put your apple chunks in the bowl with the other ingredients. Squeeze the entire lemon over the apple to season the salad and prevent the apple from turning brown. </li>
<li>Add your quinoa and hazelnuts to the mixture, drizzle with the oil. Add salt and pepper to taste. Season with more lemon juice if you like. Mix well and cool completely. Allow the flavors to meld for 20 minutes before serving! </li>

Allow it to soak overnight, preferably in the <b>moon light</b>. In the morning there are two options:</div>

INGREDIENTS<br />
2 tbsp butter<br />
1 cup sliced mushrooms<br />
1/4 cup chopped onions<br />
2 tbsp flour<br />
1/2 tsp salt<br />
1/8 tsp black pepper<br />
1 cup cooked wild rice, divided use<br />
1/4 sliced almonds, divided use<br />
1 cup chicken broth<br />
1 cup half and half<br />
1/3 cup fresh parsley<br />
6 ounces cooked chicken, diced<br />
1-2 tbsp dry sherry<br />

DIRECTIONS<br />
1. In a small skillet, melt butter. Saute mushrooms and onions (5-6 minutes).<br />
2. Add flour, salt, and pepper. Continue cooking, stirring, to create roux (1 minute).<br />
3. Add onion mixture, half of rice, half of almonds, chicken broth, and half and half to the Vitamix and secure lid.<br />
4. Select Hot Soup program. Start machine and allow to complete cycle.<br />
5. Select Variable 2. Start machine and remove lid plug. Drop in remaining rice, almonds, parsley, chicken and sherry. Blend 5 more seconds. Serve immediately.<br />

COMMENTS<br />
A little too blended, thick and creamy for my liking. Also even though it's a quick soup to make, it requires a lot of clean up because of the prep for the mushrooms, onions, rice and chicken.<br />
